This is a light and fresh entremet with flavours of mint, lemon, strawberry, coconut, lime and almond. Perfect for hot summer days. It is an intermediate level entremet meaning it does take a few skills to make, but not entirely difficult. All measurements are tried and tested using specific quality and grade ingredients which may be a bit more difficult to come by, so substituting alternates could mean quantities may change slightly. Have fun playing around and making the recipe your own. All quantities are given in weight to maintain exact precision and minimise variations of results… eg. different size of eggs would give a different result.

This particular entremet consists of 5 elements layered to my interpretation of how a forest floor would appear. With chocolate bark, pistachio moss, fresh strawberries and cherries and nuts on a forest floor of chocolate glazing. Ive attached the recipe as a pdf to make it easier to work with.
